This is a cute and decorative idea for serving a light fruit salad to guests at a party or as a snack at home. It is very easy and does not require a great amount of preparation. I used kiwis, red grapes, watermelon, blackberries, cantaloupe, and unsweetened coconut for a tropical flair. This recipe yields 2 servings at approximately 190 calories per serving depending on the variety of fruit used.<br />

<u>Fresh fruit salad in an orange bowl</u><br />
2 large oranges<br />
2 kiwi, cut into slices and quartered<br />
1 cup of assorted chopped fresh fruits including:<br />
Red grapes<br />
blackberries<br />

Shredded unsweetened coconut<br />

I love the fall season and the flavor of pumpkin and spice. I came up with a recipe for pumpkin pancakes using whole wheat pastry flour instead of white flour. I found that by using whole wheat pastry flour mixed with oat bran I was able to achieve a lighter texture and the taste I was hoping for. This recipe yields about 5 servings at 345 calories per serving.<br />

<u>Whole Wheat Pumpkin Pancakes</u><br />
1 1/4 cups 1% milk (or preferred milk)<br />
2 eggs<br />
3/4 cup solid pack pumpkin<br />
2 teaspoons vanilla<br />
2 Tablespoons vegetable oil<br />
3/4 cups whole wheat pastry flour<br />
3/4 cup oat bran (I used Bob's Red Mill)<br />
1 Tablespoon baking powder<br />
2 Tablespoons sugar or preferred sweetener<br />
1/2 teaspoon nutmeg<br />
1/2 teaspoon ginger<br />
1/2 teaspoon ground cinnamon<br />

I came up with a cucumber salad recipe containing blueberries, walnuts, cherry tomatoes and feta cheese tossed in a balsamic vinaigrette dressing. This recipe contains approximately 4 servings at 244 calories per serving when using fat free Feta cheese and 1/4 cup of the prepared dressing. Note that if the fat free feta cheese is replaced, the calories per serving increases to 265. This is a great salad to serve with a light dinner or have as a light lunch.<br />

I love cold pasta salads during the summer but worry about too much added fat and calories in some recipes. I experimented and came up with this healthy alternative. This fresh spinach pasta salad is tossed with an olive oil vinaigrette and seasonings including fresh parsley and basil giving it plenty of flavor. This recipe yields approximately 10 servings and for fewer servings may be halved. Each serving has approximately 330 calories. <br />

Fresh mozzarella has a softer and more moist texture than regular mozzarella. One ounce of fresh mozzarella contains about 60-70 calories,5 grams of fat, and 5 grams of protein. I enjoy it as a special treat once in awhile. Expert guidelines recommend that as part of a healthy diet, individuals should consume between 25 to 35 percent of total daily calories from fat from sources such as fishes, nuts, and vegetable oils. Saturated fats consumed should be less than 7% of an individuals total daily calories consumed. Fresh mozzarella can be incorporated as part of a well balanced, healthy and nutritious diet.<br />

I served the fruit skewers on a decorative tray (22 inches X 14 inches) which held a total of 12 skewers from left to right as shown above.<br />
<br />
<u>4th of July Fresh Fruit Kebabs</u><br />
<br />
Approximately 2 pounds fresh strawberries, washed and drained<br />
Fresh blueberries, washed<br />
Approximately 6-8 fresh bananas, cut into 1 inch thick slices<br />
Approximately 20 yogurt covered raisins to use for "stars". I prefer a no sugar variety. I served the fresh fruit with plain greek yogurt.<br />
<br />
I assembled the "flag" from left to right. At the top of the first skewer, I used 2 blueberries, 1 yogurt raisin, 2 blueberries, another yogurt raisin, 2 blueberries, 1 banana slice, 1 strawberry, 1 banana slice, 1 strawberry, 1 banana slice, and another strawberry.<br />
<br />
At the top of the second skewer, I used 1 blueberry, 1 yogurt raisin, 2 blueberries, 1 yogurt raisin, 2 blueberries, 1 yogurt raisin, and 1 blueberry.<br />
<br />
On the 3rd skewer, I repeated the same pattern I used on the first skewer and on the 4th skewer I repeated the pattern I used on the second skewer. This pattern continues until reaching the 7th skewer.<br />
<br />
For the 8th-12th skewers, at the top of each skewer I used 1 strawberry followed by 1 banana slice and repeated this pattern until reaching the full height of the tray. On each skewer I used a total of 5 strawberries and 4 banana slices.<br />
<br />
Below are photographs of the fireworks display held at the University at Buffalo. We are fortunate that we live close enough to the campus that we are able to walk each year. The pictures below were taken on July 4, 2015.<br />

I love serving fresh fruit and vegetable salads during the spring and summer months. This salad is not only delicious, but it is truly a colorful work of art. I love the bright beautiful rainbow of colors in the fresh bright green spinach, red strawberries, and bright blueberries. This salad serves 8 at approximately 150 calories per serving, not including the vinaigrette dressing. The dressing has about 88 calories per Tablespoon.<br />

<u>Strawberry Spinach Salad with Pecans and Goat Cheese</u><br />

3 cups strawberries, washed, drained, and sliced in half<br />
2 cups blueberries, washed and drained<br />
16 oz. Baby Spinach, washed<br />
1/2 cup pecans<br />
3/4 cup Goat cheese crumbles<br />

I slipped up and gained some weight during the past year. One reason it is so important for me to continue posting updates is that it is cathartic and forces me to remain accountable. I am relieved I only had a few pounds to lose and that the challenge was not insurmountable. I developed a couple of bad habits due to stress which led to the recent changes on the scale. I am very happy I have since lost the weight and have learned something valuable from the experience.<br />
<br />
I had a few "clarifying moments" when it became crystal clear and I knew what I had to do. Mom knew how much posting in this blog meant to me and was my most ardent supporter. She would have wanted me to face this challenge head on until I was satisfied I had reached my goal. I am grateful for the support of family and the encouragement from my trainer that yes, these results were attainable. I was surprised to discover that one bad habit in particular had been the cause of my recent weight gain. Recognizing this and making some needed changes, I achieved the results I had been hoping for fairly quickly. Lesson learned. Sometimes we don't even realize the negative consequences associated with our bad habits until we begin changing them. And for me, this knowledge was empowering. I am not going down this road again.<br />

I love working with a trainer because it helps with motivation and provides the direction and guidance I need to reach my fitness goals. I must admit that proper form does not come naturally for me and I often do not even realize when I am doing an exercise incorrectly. You should be able to speak openly and honestly about yourself and your personal aspirations. You should always speak to your doctor before beginning any new exercise regimen and in advance of hiring a trainer. If you have physical limitations or prior injuries, this information would need to be communicated to your personal trainer so that a program specific to your needs and limitations is developed. A trainer would want to know your goals and what you would like to get from your program and how committed you are to achieving it. This knowledge helps a personal trainer put together a suitable program that helps you reach your goals of being healthier and stronger. <br />

Trainers should have and be able to verify their credentials and show an appropriate certification for their area of expertise. Trainers may specialize in a specific area including for example nutrition, sports conditioning or weight management. Some widely recognized programs include the American College of Sports Medicine (ACSM), the American Counsel on Exercise (ACE), and the National Strength and Conditioning Association (NSCA). In addition, some trainers also may hold a four year college degree in a Fitness related field. As this is a field which is constantly evolving, trainers should stay current with the latest trends and research. It is also important to check that the trainer is keeping the certification he or she has current.</div>

Another important consideration is cost. Rates are usually charged by the half-hour or hour. The rates in larger cities and urban areas tend to be higher than in smaller towns, therefore it is important to do some research. Group training sessions allow for the trainer to have up to 4 or 5 clients in a class at the same time and can help in reducing the cost. This may be beneficial to the participants if it helps with motivation and in holding the other members of the group accountable during class. Discounts may be offered when multiple sessions are purchased in advance resulting in a lower cost per session. You should check that the trainer has availability when it is convenient in your schedule.</div>

It is important to choose a trainer that suits your personality and that you are motivated to work with. Give some thought to what training style is most suitable for you. Communication is key and you should feel comfortable asking questions if you are not certain about the proper form for an exercise. </div>

I have a wonderful Mother. She has always been a tremendous inspiration to me. Beautiful inside and out. I have been blessed to have her as a part of my life. There is not a day that goes by that she is not in my thoughts. She continues to live on in my memories and I know that she will always be by my side.<br />

My mother was a tremendous role model and she taught me and my sister to be considerate and to care about other people and things. She taught us to have empathy and reach out and help other people who were hurting or suffering. I remember when the movie, Grease, came out in 1978. I was really excited to see it and Mom and I went to the Beacon Theater on Main Street in Port Washington, NY. I really liked all the music, and I thought John Travolta was really cute. But Mom was a little upset at the ending, she didn't like how "Sandy" changed for Danny. She told me to never change who I was to please a boy. That I should always be confident enough in myself, sound advice to an impressionable 13 year old girl, love you Mom!<br />

This is what lasting memories are made of. Thank you Mom, you are the best, for always thinking of your daughters first and supporting them in any way that you could.</span><br />

I was driving in the car with my daughter the other day and the song "Everything She Wants" - George Michael circa 1984 came on the radio. I remembered a conversation I had with Mom during my teenage years after she had heard this song. She hoped that what I would value most in life are the things that a person could never place a dollar value on and which have true meaning, love, friendship, and family. Possessing more material things won't bring us happiness, and if anything, may even drive a wedge between us and the people that we love. And Mom, you were so right as you always were, truer words could never have been spoken. Thank you for always setting me straight and reminding me to contemplate the consequences of my actions. "All the things we sign and the things we buy. Ain't gonna keep us together, girl it's just a matter of time."<br />

I was the baby in the family. She helped bring this shy little girl out of her shell. It was Mom who gave me the confidence to believe in myself and know that anything is possible with a little hard work and determination. Her support never wavered. She consoled me after one too many broken hearts and offered a shoulder to cry on whenever I was feeling blue. I have caught myself in the last month picking up the phone to call Mom, as she is always the first person I would call whenever I had good news to share.<br />

I came up with a recipe for a healthy snack bar which includes hazelnut meal flour and muesli cereal. It is a moist and chewy bar which I enjoy as a afternoon snack or as a quick healthy breakfast. This recipe yields 24 bars at approximately 214 calories each.<br />

<u>Hazelnut Muesli Snack Bars</u><br />
<u></u><br />
3/4 cup honey<br />
3/4 cup peanut butter<br />
2 Tablespoons butter<br />
1 cup peeled and chopped apples<br />
3 cups Muesli of choice - I used Muesli Fusion Athlete Fuel<br />
1/2 cup chopped peanuts or choice of nuts<br />
1 cup Hazelnut Meal Flour<br />
3/4 cup shredded unsweetened coconut<br />
1/4 cup raisins<br />
1/4 cup natural applesauce<br />
1 teaspoon vanilla<br />
1 teaspoon cinnamon<br />

Preheat oven to 325 degrees. Spray 13 X 9 pan with nonstick spray. Peel and chop apples.<br />

My daughter is an avid American Girl Doll collector. For each of the past 5 years, she usually wanted an American Girl doll either for a Birthday or Christmas gift, and following our visit, she now has a total of 5 dolls. She was excited when she heard about the new store opening in Columbus, Ohio. We decided that as an early birthday gift I would make the 5 hour drive from Buffalo, NY to visit the store. We stayed overnight at the Hampton Inn Columbus-Easton Area location. This hotel offered an American Girl package for guests planning a visit to the American Girl store. The staff did a wonderful job. Our stay included an American Girl doll sized travel bed that my daughter could take home, an American Girl movie which we watched in the evening in our hotel room, and a selection of American Girl books that my daughter could "borrow" during our stay. Pictured below is my daughter's American Girl doll look-a-like enjoying the complimentary breakfast.</div>

The hotel is literally a hop, skip and jump away from the Easton Town Center in Columbus and with the help of my GPS, was very easy to find. When we first arrived at the store, we waited in line to make an "appointment" at the Doll Hair Salon which I would recommend doing promptly because the "salon" gets very busy. Our time slot was 2 hours after we scheduled the appointment. My daughter selected the Birthday "updo" which included a tiara.</div>

I did my best not to be tempted by the selection of exquisite chocolates and delectable treats. The Caffe Latte hit the spot and was just the pick-me-up I was craving. Something I often struggle with is how to encourage my children to develop healthy eating habits without being so restrictive that they feel deprived. Finding the middle ground can mean the difference between a child who develops into a "sugar addict" or one who has mastered the skill of moderation. It is most definitely a matter for debate. This being a once a year celebration for her birthday, she had been looking forward to enjoying some treats.</div>

For dinner, we had reservations at the American Girl Bistro (Restaurant). The restaurant was smaller than I had anticipated, and if you are planning a visit to the American Girl store, reservations are a must. Our dinner began with the choice of an appetizer. I selected the Artichoke Spinach Dip with pita triangles. It was tasty but I mentioned to my daughter that it tasted like a bit of an indulgence. She suggested that I should try to make a "healthier" spinach dip recipe for my blog, what a wonderful idea!</div>

I love bagels, more specifically, everything bagels! However, I have to carefully watch my carbohydrate intake and the bakery shop bagels are usually too large. I decided to try making mini whole wheat bagels. This recipe uses a mixture of whole wheat flour and whole wheat pastry flour for the dough. I made 12 smaller sized bagels and a mixture of onion flakes, ground sea salt and dehydrated roasted garlic, poppy seeds, and sesame seeds for the "everything" topping. They were surprisingly easy to make. Each bagel has approximately 195 calories if sugar is used.</div>

1 1/4 cups plus 4 Tablespoons water (heated to 120 to 130 degrees F per yeast instructions)<br />
1 Tablespoon Bread Machine Yeast <br />
2 1/4 cups whole wheat flour<br />
2 1/4 cups whole wheat pastry flour<br />
3 Tablespoons preferred sweetener (or sugar)<br />
1 teaspoon salt<br />
2 Tablespoons vegetable oil<br />

<u>Everything Topping</u><br />

2 Tablespoons Poppy seeds<br />
2 Tablespoons Sesame seeds<br />
2 Tablespoons dried onion flakes<br />
Coarse salt (optional)<br />
Dehydrated roasted garlic (optional)<br />

Mix hot water with the Bread machine yeast. Combine water mixture, flour, sugar, salt, vegetable oil and yeast in the mixing bowl of a stand mixer. I actually mixed the dough by hand, although it would be easier to use the dough hook and combine the ingredients using a stand mixer. Increase the water by tablespoon as necessary to achieve the right balance of liquid to dry ingredients. Mix using the stand mixer for approximately 8 or 9 minutes. Stretch the dough with your fingers. If the dough tears easily, it needs more kneading. Fully developed dough should be able to stretch to a thin layer without ripping.<br />

I came up with a recipe for Strawberry Mango muffins using fresh strawberries, Protein Zone Mango Naked Protein Juice Smoothie drink, and oat bran. The Naked brand protein juice smoothie is a fruit drink with whey protein and has no added sugar. The drink contains mango, oranges, bananas, and apples. This recipe yields approximately 18 muffins at 161 calories/muffin. <br />
<br />
<u>Strawberry Mango Muffins</u><br />
<u></u><br />
1 1/4 cups Protein Zone Mango Naked Protein Juice smoothie drink<br />
1 egg<br />
1/4 cup honey<br />
1 cup fat free sour cream<br />
1/4 cup preferred sweetener (or sugar)<br />
1/4 cup natural applesauce<br />
1/4 cup vegetable oil<br />
1 teaspoon vanilla<br />
2/3 cup water <br />
1 cup oat bran<br />
1 cup whole wheat pastry flour<br />
4 teaspoons baking powder<br />
1/4 cup chopped walnuts<br />
1/4 cup unsweetened shredded coconut (I used Bob's Red Mill)<br />
2/3 cup Muesli Fusion An-ox cereal (with goji berries and blueberries)<br />
2/3 cup chopped strawberries<br />

Preheat the oven to 400 degrees. Combine the Protein Zone Mango drink, the egg, honey, preferred sweetener (or sugar), applesauce, vegetable oil, vanilla and water and stir to combine.<br />

This past Friday my daughter and I were looking for something fun to do and the weather was perfect to spend the afternoon outside. I love taking long walks and my daughter really enjoys the zoo. This is an ocelot that was in the Rainforest Falls exhibit. Ocelots weigh between 17-24 pounds and stand between 16-20 inches tall. </div>

Also in the Rainforest Falls exhibit there was a cave inhabited by vampire bats. The bat shown below would fly around, and come back to this small area and peer out at us from the other side of the glass. He was a very entertaining little fellow. These creatures feed on blood, but they rarely attack humans. Horses, cattle, and other livestock is what they usually feed on.</div>

My daughter got a kick out of the anteaters which were also part of the Rainforest Falls exhibit. This little guy paced back and forth while we were watching. I wondered whether this was typical behavior for the species. I read that the "pacing" we observed at the zoo may actually be a feature of an animals normal behavior. In the wild it would be as if the anteater was wondering the pampas in search of termite mounds.<br />

Here is a White-faced saki monkey staring out at us as we made our way around the final part of the Rainforest Falls exhibit. A pair will often mate for life. They are very devoted and will strengthen their bond by grooming one another.<br />

The meerkat exhibit was interesting to observe. I read that this species exhibits "cooperative" behaviors in which each individual plays an important role. Meerkats are found in Southern Africa and live in groups consisting of 5-30 individuals.</div>

The gorillas are located in the Zoo's Main Animal Building. They are the largest members of the primate family and range in size from 4 to 6 feet while their weight ranges from 150 to 450 pounds. The males of the species tend to be larger than the females.</div>

I was in the mood for a meatless meal so I came up with this recipe for stuffed red peppers. This recipe has a bit of a kick. My husband likes a lot of flavor so he thought it could be even spicier, but I thought it was about right. This recipe yields 6 servings at approximately 255 calories/serving. Enjoy!<br />

<u>Black Bean Stuffed Peppers</u><br />

1 Tablespoon olive oil<br />
2 cloves garlic<br />
1/2 cup chopped green peppers<br />
1/2 cup chopped onions<br />
1 jalapeno pepper, chopped<br />
1/2 cup chopped carrots<br />
2 cups cooked brown rice<br />
1/4 cup chopped fresh cilantro<br />
1 teaspoon chili powder<br />
1 teaspoon cumin<br />
1/4 teaspoon paprika<br />
Pinch of salt and pepper<br />
2 10 oz. cans Rotel, Diced tomatoes with Lime Juice & Cilantro<br />
1 16 oz. can black beans, rinsed and drained<br />
2/3 cup corn, thawed<br />
3/4 cup shredded reduced fat monterey jack cheese (Or try Sargento Reduced Fat 4 Cheese Mexican)<br />
6 red peppers, sliced in half lengthwise<br />
1 1/2 cups water<br />

Preheat the oven to 375 degrees. Chop the jalapeno pepper into small pieces. Careful when handling the pepper. Remember to wear gloves. Even hand washing will not remove the potentially irritating juices from your skin. Remove the seeds and veins from the pepper before chopping.<br />

I experimented and came up with a recipe for skillet cornbread. I prefer to use whole wheat flour in recipes whenever possible. However, I discovered that in this recipe, adding some white flour helped to achieve a lighter texture for the cornbread so that it was not too dense. On my first attempt I used only whole wheat flour and the result was that the cornbread was a little heavier than I would have liked. To keep the recipe lowfat, I used fat free cheddar cheese and lowfat buttermilk. This recipe yields 9 servings of cornbread at approximately 252 calories/serving.<br />

<u>Jalapeno Cheddar Skillet Cornbread</u><br />

2 Tablespoons vegetable oil<br />
2 Jalapeno peppers, seeded and diced<br />
1/4 cup vegetable oil<br />

I could not find a decent picture from my senior year in high school. This is the best I could find, although here I was a few years younger (16). This is what I looked like the last time many of my high school friends had seen me. In this pic I was sporting my classic 1980's Farrah Fawcett inspired feathered hairstyle. I graduated from Paul D. Schreiber High School in Port Washington, NY in 1983.<br />

This is the first of the reunions I will be attending. I missed my 10th year reunion because I had been vacationing with my husband in Cancun. When my 20th year reunion rolled around, I was very busy with my young family and did not want to make the trip from Buffalo, NY to my hometown in Long Island.<br />
<br />
I am anxious about attending, after all it has been many years since I have seen many of my friends from high school. I am relieved that one of my closest friends in my graduating class will be joining me. In recent years I have frequently visited my hometown as my parents are still living in Port. Although most of my friends have moved on and are no longer living in the area, a few still remain.<br />

While it is true that with the advent of social networks such as Facebook, there is not as much mystery and anticipation in advance of the big event. While this may be true, I am still anxious to reconnect with old friends whom I have not seen in many years. Although I have made frequent trips to my hometown during the last few years, I have only visited with one of my closest friends who still lives in Port. Some of my other former classmates are scattered in the Long Island/New York area, while many have relocated to other cities and states. So this is very exciting, and now just a short 4 weeks away.<br />

Our family was long overdue for a vacation. The last time we visited Orlando was 4 years ago when my husband traveled to the area for business. Our stay was brief and that being said, we did not visit many of the sights we would have liked. The picture below was taken at the Typhoon Lagoon water park.<br />

The beautiful sunny weather was therapeutic. The most enjoyable part of going to the Disney parks was enjoying long walks outside in the mild and sunny weather. It is what I look forward to most as winter comes to an end in Buffalo.<br />

The world showcase in Epcot was a highlight of the vacation. Eleven countries are represented in the showcase. There is a transition from one country to the next one as you make the walk around the lagoon.<br />

We enjoyed watching the musicians perform outdoors during the evenings in the Downtown Disney area. One night we watched Gerardo Manrique, a talented guitarist perform. He has recorded for several popular artists including the Miami Sound Machine and John Secada. My son, a guitarist, was very impressed by his talent.<br />

I wanted to share my own personal experience of how becoming more physically active changed my life. It was cathartic to talk about what led me on this journey and to share my story. I was a little worried about coming clean, but I think it was the right thing to do.</span><br />

<span style="font-family: inherit;">When I first moved to the Buffalo area I gained a lot of weight after my 3rd child was born. People often ask how much weight I lost. To be honest, it is a painful subject for me to talk about. I did not struggle as much with my weight when I was younger and I think that seasonal depression led to most, if not all, of my weight gain. I can only hope that something positive might come from sharing my story. I lost the weight 5 years ago and I will not look back. It was a tremendous growth experience and continues to shape me as a person.</span><br />
<span style="font-family: inherit;"></span><br />

lived in Virginia.<span style="mso-spacerun: yes;"> </span>This changed after I
moved to Buffalo because I do not enjoy spending time outdoors during the
winter months.</span></div>

<span style="font-family: inherit;">What changed that?</span></div>

<span style="font-family: inherit;">I had gained a lot of weight after my youngest child was
born.<span style="mso-spacerun: yes;"> </span>I didn’t struggle as much with my
weight when I was younger so this was a difficult period for me.<span style="mso-spacerun: yes;"> </span>I was very depressed and knew that I had to
make some drastic lifestyle changes.<span style="mso-spacerun: yes;"> </span>I
have lost a lot of weight (in the double digits) and I have maintained the
weight loss for 5 years.<span style="mso-spacerun: yes;"> </span>Exercise helps
me to cope emotionally with the long winters.<span style="mso-spacerun: yes;">
</span>It was a difficult adjustment for me after moving from a warmer
climate.<span style="mso-spacerun: yes;"> </span>I am eating a much healthier
diet now.<span style="mso-spacerun: yes;"> </span>I credit much of my weight
loss to giving up eating junk food and replacing white flour with whole wheat
in recipes whenever possible.</span></div>

<span style="font-family: inherit;">There are so many benefits that I get from exercise.<span style="mso-spacerun: yes;"> </span>I feel so much stronger than I did when I was
out of shape.<span style="mso-spacerun: yes;"> </span>Zumba is my
favorite workout, after an hour class I walk out transformed. It helps to put a
smile on my face.<span style="mso-spacerun: yes;"> </span>I am a shy person and what
I love about zumba is that it helps me to express myself. I have more
confidence and energy, I feel better about myself and how I look. I am a
different person than I was just 5 short years ago, happier, healthier, and
more content.</span>

Today is unseasonably cold and windy in Buffalo NY and I am in the mood for some soup. To keep this recipe lowfat, I used 4 ounces of Jarlsberg light swiss cheese. This cheese is very flavorful and each serving (1 ounce) has 70 calories and 4 grams of fat. Regular swiss cheese has 100 calories per ounce and 8 grams of fat. More cheese could be used as a garnish if preferred, keeping in mind that this would increase the calories per serving. As prepared, this recipe yields 5 servings of soup at approximately 260 calories each.<br />
<br />
<u>Low Fat French Onion Soup</u><br />
<u></u><br />
5 onions sliced thin<br />
2 Tablespoons olivio light buttery spread (or similar butter substitute)<br />
1 Tablespoon olive oil<br />
1 teaspoon salt<br />
2 garlic cloves<br />
4 cups low sodium beef broth<br />
1/4 cup red wine<br />
1 Tablespoon worcestershire sauce<br />
1 teaspoon sweetener of choice (or sugar)<br />
1/4 teaspoon pepper<br />
5 thin slices whole grain french bread or sliced baguette<br />
5 teaspoons freshly grated parmesan cheese<br />
1/2 cup shredded Jarlsberg light swiss cheese (more or less to taste)<br />

Combine thinly sliced onions, Olivio buttery spread, olive oil, 1 teaspoon salt and the garlic cloves. Cook onions over medium heat until they are carmelized, this takes about 25-30 minutes. This process takes time, remember to keep stirring the onions to keep them from burning.<br />

Juice and zest from 2 Lemons<br />
1/2 cup fat free half and half<br />
1/4 cup lowfat milk<br />
1 Tablespoon whole wheat flour (to thicken sauce)<br />
1/2 cup grated parmesan cheese<br />
12 fresh basil leaves, chopped<br />
Small handful of italian parsley, chopped<br />
1/2 teaspoon salt<br />
1 pound asparagus, steamed and cut into 1 inch pieces<br />
Shredded parmesan cheese for garnish<br />

Boil and cook spaghetti as package directs and drain.<br />

Saute the garlic cloves and crushed red pepper for a couple of minutes in olive oil.<br />

Juice and zest 2 lemons.<br />

I experimented and came up with a lower fat recipe for scalloped potatoes. I used a blend of Jarlsberg Lite Reduced Fat Swiss cheese and sharp cheddar cheese with fat free Half & Half. I was pleased with the results. This recipe yields 6 servings at approximately 270 calories/serving. </div>

<u>Lower Fat Scalloped Potatoes</u> </div>

4 cups thinly slice potatoes (approx. 4 Russet potatoes)</div>

2 Tablespoons olive oil (I used Berio olive oil for Sauteing & Grilling)</div>
1 Tablespoon Olivio buttery spread<br />
1/4 medium onion, sliced thin<br />
3 Tablespoons whole wheat flour (or white flour if preferred)<br />
1 1/2 cups fat free Half & Half<br />
1 teaspoon salt<br />
1 dash cayenne pepper<br />
3/4 cups Jarlsberg Lite Reduced fat swiss cheese, shredded<br />
3/4 cups cheddar cheese, shredded<br />
Paprika<br />

Preheat the oven to 350 degrees. In a small pan, combine the olive oil and olivio spread. Cook at a low temperature until warm. Add sliced onions and saute until tender.<br />

Add flour and stir until combined. Let blend for approximately one minute. Add Half & Half and stir mixture using a whisk. Add salt and a sprinkle of cayenne pepper. Cook at a low temperature until mixture begins to boil. Add 1 cup of the cheese mixture reserving 1/2 cup of cheese to sprinkle on the top layer.<br />

Place 1/2 of the sliced potatoes in a one quart casserole dish. I sprayed the surface of the pan with Pam spray to prevent sticking. Pour 1/2 of the melted cheese mixture over the layer of potatoes.<br />

Repeat with second layer of potatoes and cheese sauce. Sprinkle 1/2 cup of the reserved shredded cheese mixture on top. Sprinkle with paprika for some color.<br />

However, lately I have been giving a lot of thought to "financial fitness". One of my goals for the upcoming year is to practice more self-control when it comes to finances. Although I do not think of myself as a big spender, I need to work on limiting my day to day spontaneous purchases. <br />
<br />
I must confess, I love coffee. When I am running around town and drive past a Dunkin Donuts, I cannot resist the urge to pull up to the drive through to get a coffee to go. And while it is okay to treat myself once in awhile, this should not be a daily event. I have stocked up on my favorite Dunkin Donuts coffee and I will bring a refillable mug with me when I leave the house. If I start to save all the money I could have spent on "convenience coffee", I could start planning my next cruise. Yes, I am proud of myself, I have gone almost a week without giving into the temptation.<br />
<br />
I also love keeping up with the latest fashions and going window shopping. But from now on, I will limit my visits to the mall to when I actually need, and not just want, something. The next time I have the urge, instead I will go to the gym and burn off the excess energy taking exercise classes!<br />
<br />
My goal for the year ahead is to practice more self control so that I can save more for the things that my family and I really want. A little bit of planning can go a long way. <br />
