Citrus Marinated Tilapia
3/4 cup orange juice concentrate
3 Tablespoons honey
1 Tablespoon olive oil
zest of 1 orange
1/2 teaspoon clove garlic
1 Tablespoon fresh dill
4 fillets of tilapia
Combine the orange juice concentrate, honey, and olive oil in a bowl. Chop the fresh dill using fine slices.
Mix the dill, orange zest and garlic into the liquid marinade.
Place the fish in a ziploc bag and cover with the citrus marinade. Carefully seal the bag to remove as much air as possible. Keep in the refrigerator for about a half hour. Preheat the oven to 400 degrees. Spray a cooking pan with non stick cooking spray. Add the fish with the citrus marinade.
Bake for about 20 minutes or until fish is cooked through and flakes easily with a fork. Serve immediately. Serves 4 at approximately 250 calories per serving.
That looks good and I don't even like fish! Good job!
