Strawberry Mango Muffins
I came up with a recipe for Strawberry Mango muffins using fresh strawberries, Protein Zone Mango Naked Protein Juice Smoothie drink, and oat bran. The Naked brand protein juice smoothie is a fruit drink with whey protein and has no added sugar. The drink contains mango, oranges, bananas, and apples. This recipe yields approximately 18 muffins at 161 calories/muffin.
Strawberry Mango Muffins
1 1/4 cups Protein Zone Mango Naked Protein Juice smoothie drink
1 egg
1/4 cup honey
1 cup fat free sour cream
1/4 cup preferred sweetener (or sugar)
1/4 cup natural applesauce
1/4 cup vegetable oil
1 teaspoon vanilla
2/3 cup water
1 cup oat bran
1 cup whole wheat pastry flour
4 teaspoons baking powder
1/4 cup chopped walnuts
1/4 cup unsweetened shredded coconut (I used Bob's Red Mill)
2/3 cup Muesli Fusion An-ox cereal (with goji berries and blueberries)
2/3 cup chopped strawberries
Preheat the oven to 400 degrees. Combine the Protein Zone Mango drink, the egg, honey, preferred sweetener (or sugar), applesauce, vegetable oil, vanilla and water and stir to combine.
Mix oat bran, whole wheat pastry flour, baking powder, walnuts, coconut, and muesli cereal in separate large bowl. Stir to combine.
Add smoothie mixture to the dry ingredients and stir to combine.
Wash and chop fresh strawberries.
Carefully fold chopped strawberries into batter and gently stir to combine.
Place muffin liners in pan and add batter until about 2/3 full.
Bake for approximately 25-30 minutes until cooked through. Remove from oven. Enjoy!

Whole Wheat Peanut Butter Muffins
I came up with a healthy recipe for peanut butter muffins. They taste great served with jelly or jam or as is. Each muffin has approximately 122 calories. I used a brown sugar substitute called Xylitol (Ideal Brown) to sweeten the muffins. If regular brown sugar is used, the calorie count per muffin increases to 135. This product is lower in calories than conventional brown sugar. It has 202 calories per cup in comparison to brown sugar which contains 830 calories/cup . In this recipe I used 1/3 cup Ideal Brown which contains about 70 calories.
Whole Wheat Peanut Butter Muffins
1/4 cup vegetable oil
1/4 cup natural applesauce
1 egg
1 teaspoon vanilla
1/3 cup ideal brown (or brown sugar if preferred)
1/4 cup peanut butter
1/2 cup lowfat milk
1/2 cup fat free sour cream
3/4 cup whole wheat flour
3/4 cup oat bran hot cereal (I used Bob's Red Mill)
1 Tablespoon baking powder
1/4 teaspoon salt
Preheat oven to 400 degrees. In a small bowl, combine vegetable oil, applesauce, egg, vanilla, ideal brown, peanut butter, lowfat milk, and sour cream. Gently mix until well blended.
In a large bowl mix together whole wheat flour, hot oat bran cereal, baking powder and salt.
Add the egg and oil mixture to the whole wheat flour mixture. Stir until mixed well.
Add muffin liners to a muffin tin and add the batter until about 2/3 full. Place in a preheated oven and cook for about 20 minutes to 25 minutes or until done.

Pineapple Coconut Muffins

Pineapple Coconut Muffins
1/4 cup natural applesauce
1/4 cup vegetable oil
1/4 cup preferred sweetener (or sugar)
1/4 cup honey
1 egg
1 cup fat free sour cream
1 teaspoon vanilla
zest of 1 orange
1 cup whole wheat flour
1 cup oat bran hot cereal
1/4 teaspoon salt
1 and 1/2 teaspoons baking soda
1 - 8 oz. can crushed pineapple, drained (Tip- look for varieties with no added sugar)
1/4 cup chopped pecans
1/2 cup flaked unsweetened coconut (I found some in the health food section)
Preheat the oven to 350 degrees. Mix together applesauce, vegetable oil, preferred sweetener (or sugar), honey, egg, sour cream, and orange zest in a bowl. Combine the whole wheat flour, oat bran cereal, salt, and baking soda in a separate bowl.
Chop the pecans until they are fine.
The hot oat bran cereal which has worked well for me in these recipes is Bob's Red Mill Oat Bran Hot Cereal shown below.
Combine the flour mixture with the egg mixture and mix together until smooth. Add the pineapple, pecans and coconut.
Mix until thoroughly blended.
Place paper liners in a muffin tin. Add muffin batter until they are about 2/3 full. Place muffins in the oven and cook for about 20-25 minutes until they are cooked through.
Yields about 18 muffins at 137 calories each.
