Apple Spice Bran Muffins


I love the flavor of cinnamon mixed with fresh apples.  This recipe has cinnamon and a little nutmeg.  I tweeked this recipe for a couple of weeks until I achieved the right balance of fresh apples to spices.  I started with 1 cup fresh cut fresh apples and eventually increased it to 1 and 1/2 cups.   Each muffin has approximately 123 calories.

Apple Spice Bran Muffins

1 cup coarse bran
1 cup boiling water
1/4 cup honey
1/3 cup preferred sweetener (or sugar)
2 eggs
1/4 cup vegetable oil
1/4 cup natural applesauce
1 cup fat free sour cream
1 teaspoon vanilla
1 and 1/2 cups whole wheat flour
1 and 1/2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 and 1/2 cups apples diced and chopped

Boil 1 cup of water and add to the coarse bran.  Let sit for 10 minutes.  Preheat the oven to 350 degrees.


Meanwhile combine the vegetable oil, honey, eggs, preferred sweetener (or sugar), and natural applesauce.


In a separate bowl combine the dry ingredients including the whole wheat flour, baking soda, cinnamon and nutmeg. 


Add the wet ingredients to the dry ingredients and stir to combine.  Gently fold in sour cream.


Slice the apples thin and dice into small pieces.


Add the diced apples.  Place liners in a muffin tin and fill until about 2/3 full.


Cook for about 20-25 minutes until they are cooked through.  Yields approximately 18 muffins at 123 calories each.
