Pineapple Coconut Muffins

 

I came up with a recipe for pineapple coconut muffins using whole wheat flour and oat bran.  I used some grated orange peel to flavor the batter which worked well.  The recipe yields approximately 18 muffins at 137 calories per muffin.

Pineapple Coconut Muffins

1/4 cup natural applesauce
1/4 cup vegetable oil
1/4 cup preferred sweetener (or sugar)
1/4 cup honey
1 egg
1 cup fat free sour cream
1 teaspoon vanilla
zest of 1 orange
1 cup whole wheat flour
1 cup oat bran hot cereal
1/4 teaspoon salt
1 and 1/2 teaspoons baking soda
1 - 8 oz. can crushed pineapple, drained (Tip- look for varieties with no added sugar)
1/4 cup chopped pecans
1/2 cup flaked unsweetened coconut (I found some in the health food section)

Preheat the oven to 350 degrees.  Mix together applesauce, vegetable oil, preferred sweetener (or sugar), honey, egg, sour cream, and orange zest in a bowl.  Combine the whole wheat flour, oat bran cereal, salt, and baking soda in a separate bowl.


Chop the pecans until they are fine.


The hot oat bran cereal which has worked well for me in these recipes is Bob's Red Mill Oat Bran Hot Cereal shown below.


Combine the flour mixture with the egg mixture and mix together until smooth.  Add the pineapple, pecans and coconut. 


Mix until thoroughly blended.


Place paper liners in a muffin tin.  Add muffin batter until they are about 2/3 full.  Place muffins in the oven and cook for about 20-25 minutes until they are cooked through. 


Yields about 18 muffins at 137 calories each.
